Dandy Chai Latte – Nourish & Inspire Me

For National Date day this week i thought i’d post my dandy-chai syrup that was in my Christmas Cookbook. Dates are such a great sweetener to use, they are a whole food, full of fibre and taste so yummy! Definitely “Nature’s Candy!” jonsson_brooke_20131201_0882 Dates are a great thing to add to your supermarket trolley instead of sugar. Here’s some things you can use dates for:

  • smoothies
  • raw desserts
  • baking
  • nut milk
  • granola
  • to sweeten casseroles, relish or tomato sauces
  • date paste/syrup

I’ve used dates to sweeten this dandy chai syrup and it’s so yummy! Make a batch and you’re set for the week! Just add some to some warm or cold milk and boom! You have a delicious drink ready to go! jonsson_brooke_20131201_0884

INGREDIENTS FOR DANDY-CHAI SYRUP

  • 6 cups filtered water
  • 50 cardamon pods roughly crushed 4 inch piece ginger finely sliced
  • 2 vanilla pods sliced in half
  • 30 cloves +
  • 2 cinnamon sticks
  • 8 peppercorns roughly crushed
  • 2 heaped tsp nutmeg
  • 2 tsp fennel seeds
  • 3 star anise
  • 15- 20 tsp dandelion root

HOW TO MAKE

  1. Add all the above ingredients except dandelion to a sauce pan, stir and bring to the boil and then back down to a simmer.
  2. Simmer for 20 minutes and then add in the dandelion root and stir well. Simmer for 10 minutes. Remove pot from heat and let cool. Strain liquid through a nut milk bag into a bowl.
  3. Transfer the liquid to a blender, add the dates, extra cinnamon and squeeze of lemon juice. Blend for 2 minutes. You may strain the liquid again to get rid of any tiny traces of date that may be left over (optional)
  4. Go to page 19 for directions to make the Dandi Chai Latte.

Extra Ingredients:

  • 12 dates
  • 1 lemon wedge 1⁄2 tsp cinnamon
