Strawberries and Cream Chia Pudding
Here is my recipe for Chia Pudding that was a great sugar-free snack/meal to include in my Vibrant Life Cleanse. I ate this as my Fruit & Nuts meal. I didn’t put any sweetener in mine but you could of course add in some sweetener like honey or maple syrup if you’re not on a cleanse, however i find the coconut milk is quite sweet anyway. It almost feels like a cheeky dessert while you’re on your cleanse but it’s totally healthy, full of fibre, good fats, antioxidants and vitamins from the strawberries This chia pudding is sugar-free, dairy-free, gluten-free, vegan and delicious! Chia seeds are a powerhouse of nutrition, high in omega-3’s and fibre. Definitely a staple in my pantry and i use them in smoothies, cakes, desserts and muesli. Give this Chia Pudding a try! x
Strawberries and Cream Chia Pudding
Serves 2
What you need:
- 1 cup coconut milk
- 1/2 cup almond milk and extra milk for serving if required
- 3-4 tablespoons chia seeds
- 1 tablespoon abc nut spread (optional)
- 1 tsp vanilla extract
- 1/4 cup Coconut flakes
- 8 Strawberries
- tiny squeeze of lemon juice to freshen up creamy pudding
- 1-2 tsp maple syrup, rice malt syrup, honey or coconut nectar if using sweetener (optional)
What to do:
- Blend the coconut milk, almond butter, almond milk, vanilla extract (sweetener if using) and a squeeze of lemon until smooth
- Transfer to a large jar and stir through chia seeds
- Cover jar and leave in fridge for 2-4 hours, stirring occasionally
- Once the chia seeds have absorbed the milk and are a pudding-like consistency, divide them into 2 bowls/glasses or jars
- Toast coconut flakes under a grill until golden
- wash and chop strawberries and serve on top of chia pudding with coconut flakes
- You may like to add a little extra milk at the end too
