Mango, Kiwi and Avocado Salsa – NourishAndInspireMe

So this recipe came about after my friend Alia from Upwave asked if i could create a superfood salsa with mango and kiwi. Now, i have never been a fruit with savoury kind of girl. I never understood putting mango in a salad or orange in chocolate for that matter. But! This recipe has won me over! What a taste sensation. It’s so vibrant, fresh and packed with an array of super whole foods like mango, kiwi, cucumber, coriander, avocado and green bell peppers. Plus you know i love recipes that are super easy to make. My grandma helped me with this photoshoot, what a doll, “nanny” is my favourite assistant and she looooved this salsa!

This recipe would be a perfect summer salsa for a party or barbecue with friends. I was a little bit naughty and used corn chips with this recipe but they were organic, non-gmo and i rarely eat things like that so it was a nice crunchy treat! If you want to health it up more i’d suggest a yummy dehydrated cracker, buckwheat crisps or even some rice cakes sans the sunflower oil.

You could also use this salsa in your mexican dishes like tacos, nachos or as a cute little tacitto canapé for your guests. Just be mindful that the mango, kiwi and lime make this salsa super juicy so best to make and serve immediately, otherwise you might end up with a soggy mess!

If you don’t like spicy food, you can omit the jalapeño or just use less. I can’t tolerate much heat but i chopped up the jalapeño’s fine and it gave a nice spicy bite to the salsa which is otherwise quite sweet.

Why is it Super?

  • Number 1 because it contains avocado, my favourite superfood which is rich in vitamin C, K, E, folate, fibre and lutein to make your skin glow with health!
  • Kiwi’s are packed with vitamin C, intact they contain double the recommended daily requirement for vitamin C.
  • Mango’s provide beta-carotene vitamin C and B6, potassium, copper, polyphenols and mangeferin which has shown to lower blood sugar and help to prevent tumour growth. Mango’s can also help to treat anemia and improve heart health. It sort of looks like the shape of our heart too don’t you think?   • And Lastly, it’s RAW, so you’re getting an abundance of enzyme rich whole foods! YUM!

Anyway so if you’re anti-fruit in savoury like i was give this salsa a go!

What you need:

  • 2 mango cheeks
  • 1 kiwi
  • 3-4 tsp lime juice
  • 1 handful fresh coriander
  • 1/4 of a large red onion or 1/2 a small one
  • 1-2 green jalapeño chilli’s depending on how hot you like it
  • 1 avocado

What to do:

  • Finely chop the red onion and transfer to bowl
  • Dice/Chop the mango, kiwi, cucumber, avocado, jalapeño pepper and green pepper into small cubes and add to onion
  • Roughly chop the coriander and add to salsa
  • Add lime juice, salt and pepper and combine well
  • Taste test and add any extra sea salt or jalapeño as desired.

  • ½ of a small green capsicum/pepper
  • salt and pepper to taste

Instructions

  1. Finely chop the red onion and transfer to bowl
  2. Dice/Chop the mango, kiwi, cucumber, avocado, jalapeño pepper and green pepper into small cubes and add to onion
  3. Roughly chop the coriander and add to salsa
  4. Add lime juice, salt and pepper and combine well
  5. Taste test and add any extra sea salt or jalapeño as desired.
