Oh how I love Ginger – I always loved ginger beer or ale but it’s filled with lots of sugar and sometimes yeast. So I decided to make my own gingery version of a celebratory drink. You can add vodka or simply skip the alcohol all together.
I have skipped the sugar and used raw honey instead and opted to blend it once the ginger-syrup is cool to keep the honey from being heated, therefore retaining all it’s goodness!
This drink is super hydrating with the addition of coconut and mineral water so great for the summer! However the warming ginger would fit during winter as well if you’re in the northern hemisphere this time of year.
I’ve been turning away from alcohol the last few years and only have the odd celebratory drink here and there. This little concoction is perfect for a mocktail if you’re skipping on the alcohol. It feels a little more special than just having water or mineral water all the time!
What you need to make the syrup:
4inch piece ginger peeled
1 litre of filtered water
4 tablespoons raw honey
1 tsp cinnamon
To make 6-8 drinks you will need:
2 limes
2-3 cups ice
1 bottle mineral water
1 litre coconut water
2 tsp coconut sugar
6-8 Cinnamon sticks for decoration
What to do:
Pour into sauce pan, bring to the boil and back to a simmer, cook for 45mins
Let cool and strain through a nut milk bag
This will yield around 1.5-2 cups of ginger syrup
1.5 cups will around 6 drinks 2 cups will yield around 8 drinks
Blend syrup with 4 tablespoons raw honey & 1 tsp cinnamon
To serve 1 drink:
Squeeze 1 lime wedge into glass, add ice and a shot of vodka (optional)
Now add 4 tablespoons ginger-honey syrup, ¼ cup coconut water, ¼ cup with mineral, ½ tsp coconut sugar sprinkled on top and an extra lime wedge on top
Adjust to desired taste adding more honey or coconut sugar for extra sweetness or a little extra ginger syrup for a stronger ginger flavour.
