Easy Tomato Salad by Trish Chapman

Today i have a simple, but delicious salad that’s perfect for entertaining during the holidays. I had this delicious dish on Christmas Day. It’s a a recipe from my (almost) mother in law, Trish. It was a huge it and it looked amazing on our Christmas lunch table. It was a really refreshing salad to have amongst all the Christmas food like roasted veggies, turkey, stuffing and pork.

This dish is really all about the tomatoes. You need the freshest possible tomatoes. Try to get all different varieties to make it interesting, Trish used yellow cherry tomatoes, baby roams and grape tomatoes. There’s nothing worse than a powdery tomato. I quite like cherry tomatoes, their generally nice and juicy too so you don’t risk powder failure!

We also used our favourite marinated feta from the folks at Baramba here in Victoria. It’s marinated in olive oil, pepper, thyme and other herbs and the flavour is amazing so i definitely recommend it! If you’d like to keep this dish dairy-free use a dollop of cashew cream. You can find a simple cashew cream recipe here 
You can really add your own flavour to this dish, Trish sometimes adds anchovies or capers. I really like the tomato, feta cheese, basil, olives and olive oil mix. And it really is that simple. Slice your tomatoes, arrange them evenly on the plate, crumble your feta on top, tear up the basil and place it evenly on top, add some salt and pepper, olive oil and any extras you might like e.g. anchovies, capers, olives, red onion, pine nuts, flaked almonds, currants. The choice is yours!

A Versatile Salad!

This dish is more than just a salad. The following day we used the left over tomato salad on toast and a buckwheat pizza base we had in the freezer and it was the best! No fuss, no thought, just yumminess! You could even add it to pasta with a bit of garlic. I’m all about easy food. I like to spend more time eating and enjoying the food and the company of my friends  than slaving away in the kitchen and this salad definitely allows for that.

Easy Tomato Salad

Serves 4

What you need:

  • 2 punnets cherry tomatoes
  • large handful kalamata olives pitted
  • 2 tablespoons olive oil
  • 10 fresh basil leaves
  • salt and pepper
  • 100 gm feta cheese
  • optional extras: anchovies, capers.

What to do:

  • chop cherry tomatoes in half and arrange on the plate, face up
  • Crumble your feta on top
  • tear up the basil leaves and sprinkle on top
  • add some olives,  top with olive oil, sea salt and pepper.
