Less is more sometimes right? I think so! The less time I spend in the kitchen and the more time I have to enjoy the food I’ve prepared, the better! Don’t get me wrong, I love being in the kitchen infusing love into my food but I’m all about cooking that is satisfying, quick, easy and healthy.
This Easy Guacamole certainly ticks all those boxes. Avocado is probably up there in the top 3 of my favorite foods, so in this recipe I let the avocado shine just like an avocado should! I’ve put some optional fancies that you can add at the bottom if you’re feeling creative. Otherwise this dish takes about 1-2 minutes!
Easy Guacamole
Serves 1-2
- 1 large avocado or 2 small ones
- 1 tablespoon of lemon juice
- ¼ tsp sea salt
- splash olive oil
How to make
Simply mash all ingredients together.
Dip with your favorite cracker or use in nachos or tacos.
Notes
If you want to get fancy you can add some chopped red onion, tomato, coriander, chilli, garlic or cucumber. I kinda like it the easy way with just lemon juice and sea salt and I especially like it with tamari-sesame or quinoa crackers from the brand Spiral out here in Australia. YUM!
