It’s been such an amazing year! We released our first 2 ebooks, shared some gorgeous recipes, took some beautiful photos and collaborated with some amazing people including Greatist, Nourish Melbourne, Hello Natural, Healthful Pursuit, In Sonnet’s Kitchen and more! We loved every minute of it and look forward to what’s to come for us in 2015. I can tell you we’re working on a recipe ebook called, “Easy Eats” and so far it’s looking amazing! There will be gluten-free, dairy-free, paleo-friendly, vegan, dairy-free and refined sugar-free recipes, so stay tuned for that one!
I do believe in balance and having a good time, so i’ll be celebrating this New Years Eve with a few beverages. Pina Colada is my favourite cocktail or you could even make it a mocktail and omit the alcohol,l but i like a little grey goose in mine, although traditionally you use rum, but I have bad memories of rum so i steer clear!
I’ve added a little twist to my pina colada recipe and it’s got a bit of zing to it!! GINGER! It’s no secret ginger and coconut are 2 of my favourite flavours and they both go perfectly with pineapple so i’m loving this combo!
If you can, make this cocktail with freshly cold pressed pineapple you’re all the better for it! The bottled stuff is not really healthy, it’s sugary water and doesn’t have the live enzymes or goodness that fresh cold-pressed juice has to offer. You could also add a little cinnamon to the mix if you’re currently in the season of winter to warm this drink up a little, plus it’s going to help stabilise your blood sugar levels.
The addition of coconut water in this cocktail will assist in hydration. As you know, alcohol is very dehydrating, so coconut water will provide some much needed natural electrolytes, Of course the general rule goes, 1 glass of water for every alcoholic drink you have.

New Years Eve Cocktail: Ginger Pina Colada
Serves 4
What you need:
- half a pineapple or 2 cups pineapple juice, plus 1 pineapple disc for garnish
- 3/4 cup coconut cream
- 3/4 cup coconut water (no added sugar)
- 1 tablespoon coconut nectar
- 1 inch piece ginger
- 4 cups ice
What to do:
- Juice your pineapple and ginger
- Transfer to a blender and add coconut cream, coconut water, coconut nectar and blend until smooth and frothy
- To your glasses add ice and vodka (if using)
- Pour Pina Colada on top and cut pineapple into 4 triangles. Cut a small slit in the point of each triangle and slide onto the side of each glass.
- Enjoy!
