I have to say, WOW! These Avocado Choc-Mint Popsicles are seriously good! They are smooth and creamy and so easy to make! I really like the texture the coconut cream and avocado create. If you’ve ever made dairy-free ice-cream with frozen bananas and coconut cream you would’ve noticed that after freezing it can go extremely hard and icy. But this avocado version is like the real thing!
These would be perfect for your kids or as a little after dinner treat to keep in the fridge, although i don’t know how long they’d last in my fridge! These little nutrition powerhouse treats are filled with good monounsaturated and saturated fats like avocado and coconut and omega 3’s from the chia seeds, which will also add a hit of fibre and protein.
I have used peppermint extract which you don’t need much of to get that gorgeous minty flavour and it pairs perfectly with vanilla extract. I’ve used coconut nectar to sweeten these popsicles, which is lower in fructose than honey or maple syrup, however you could use rice malt syrup for a fructose free option.
In terms of popsicles moulds, i got creative and used plastic shot glasses – you could also use paper and fancy straws as the paddle. I have popsicle mould but i wasn’t a huge fan of the shape and design of mine but this method worked great!
Getting the popsicles out of the shot glasses is quite easy, i just slipped a sharp knife down the side of the shot glass and ran it all the way around the edge, be careful not to ruin the popsicle’s perfect shape. Once it’s been out of the freezer, it should slip out with ease.

Avocado Choc-Mint Popsicles
What you need:
Makes 8 small popsicles
- 1 avocado
- 2/3 cup coconut cream
- 5-6 drop peppermint extract
- 3 -4 tablespoons coconut nectar
- 1 tablespoon white chia seeds
- 1-2 tablespoons cacao nibs
- 1 block of raw chocolate (optional you can just use cacao nibs or both!)
- Plastic or paper shot glasses
- Paper Straws
What to do:
Blend all ingredients except the cacao nibs and chocolate, until smooth
Mix in cacao nibs
Spoon the mixture into the shot glasses and use a toothpick or chopstick to ensure the mixture fills the space evenly and there are no air bubbles
Be creative with your popsicles you can add melted chocolate before and after spooning in the mixture to create layers
Alternatively you can freeze the avocado mixture as is and add the melted chocolate after your remove the frozen popsicles from the shot glasses and spoon melted chocolate over the top and freeze again
